Recipe: The Conscious Cook's Rainbow Slaw Salad

Ingredients: ALL ORGANIC
1/4 wedge purple cabbage
1/4 wedge green cabbage
1 large carrot
1 zucchini
1 squash
1 green apple
1 lemon
optional add-ins: beet (golden, red, or chioggia), watermelon daikon radish, celery, jicama, cucumber, dried fruit, nuts, dressing of choice
  1. Chop slice veggies and fruit. Place in a large bowl and toss to combine.
  2. Squeeze fresh lemon juice over salad.
  3. Add remaining add-ins and/or dressing. Toss to combine and serve.
